SCRAMBLE EGGS WITH SMOKED SALMON, CHIVES AND CREAM CHEESE

Eggs are known to be a great breakfast foodbut they can get a little boring after awhile. Why not reinvent your breakfast by adding some smoked salmon, chives and cream cheese? Smoked salmon is a great source of Omega 3's which helps with joint stiffness, asthma and depression while eggs are a great source of protein in the morning. Enjoy!

INGREDIENTS:

1 TSP of Butter
2 Eggs (beaten)
1 TBSP of Milk
Salt and Pepper to taste
1 TSP of Chives (chopped)
50-100 Gr of Smoked Salmon
A dollop of Light Cream Cheese
 

DIRECTIONS:

Place butter in a frying pan and set to low-medium heat. Let butter melt.

Add milk, salt and pepper to beaten eggs in a small bowl. Mix and add to frying pan and allow to cook and become fluffy moving the eggs around so they can evenly cook.

Plate your eggs when ready, top with chopped chives and accompany with smoke salon and cream cheese. Serve!

TOMATO, CUCUMBER & FETA SALAD WITH A TWIST - VEGETARIAN

Salads are great if you are trying to lose weight. This is a extended take on a Greek Salad but with a much less complicated dressing. Its super easy to make and can be customized however you like however this salad allows you to get a vast amount of healthy minerals and nutrients you body needs to be provided while dieting.  Enjoy!!

Yields 2 Salad Servings

INGREDIENTS:

Salad
2 Vine Ripe Tomato (chopped) - anti inflammatory properties
1/2 An English Cucumber (chopped) - hydrate
1/2 a Cup of Feta (Chopped) - optional - calcium
1/4 Cup of Red Onion (Chopped Finely) - calcium, magnesium, potassium, manganese and vitamins C
Hand full of Fresh Basil (chopped roughly) - High in vitamin K - essential to building strong bones and preventing heart disease
1/2 an Avocado (chopped) - good fats and oils
1/4-1/2 a Cup of berries (I used blackberries and blue berries) - antioxidants
1-2 TBSP of Hemp hearts - protein, fatty acids, iron and vitamin E
1 TBSP of Pine Nuts (Garnish) - protein and oils

Dressing
2-3 TBSP of Olive Oil
1-2 TBSP of Balsamic Vinegar
Salt and Pepper (as desired)

DIRECTIONS

Place all ingredients for the salad in a bowl, mix dressing ingredients in a cup and drizzle on top of your salad. Serve.

AVOCADO TOAST - GLUTEN FREE VERSION, VEGETARIAN, VEGAN AND PALEO FRIENDLY

I ♥ Avocado toast! I seriously could eat it everyday. I was doing a plant based diet in the summer and this was one of my go-to breakfast options. Avocado is rich in oils and fat that your body needs on a daily basis. Yes avocado is full of fat but its good fat that keeps your hair shiny, healthy and stops it from falling out and your nails strong - believe me there are worst things I can eat. You can obviously eat this on toast as it is just as easy to make but I like to use rice crackers for their gluten free properties. I used to use gluten free bread and tried a bunch of different kinds but I like this better. Also its super easy to make when your in a rush in the morning.

INGREDIENTS:

1-2 Rice Cakes (depends how many you want)
1/4-1/2 and Avocado (I usually do 1/4 per rice cake)
Salt and Pepper to taste
1/4 - 1/2 a lime (juice) I like lots of lime juice!

DIRECTIONS:

Mash and spread the avocado onto your rice cracker.

Salt and Pepper

Sprinkle Lime on top and serve.

*You should serve it or eat it right away because the rice cracker will absorb all the moisture and start to get soggy.
