HOLIDAY POMEGRANATE-CRANBERRY MOJITO

I know it’s only November but I am already so excited for the upcoming holidays! One thing that I’m really looking forward to is being reunited with close family again and although I know this COVID Christmas will probably look completely different than previous years, I’m still looking forward to celebrating all that we have to be grateful for. To help you get in the festive mood I thought I’d share a recipe for a welcome cocktail you can serve at your family gathering to help kick off the celebrations. This cocktail uses seasonal favorites like pomegranate and cranberry and can easily be made into a mocktail for kids simply by removing the rum!

INGREDIENTS:

- Cranberry Sauce -
3 TBSP of Sugar
1/4 CUP of Water
1/2 CUP of Fresh Cranberries


- Cocktail -
Sugar for Rim
1 Slice of Lime
8 Mint Leaves
2 TBSP of Lime Juice
2 Oz of Pomegranate
2 Oz of White Rum
Splash of Canada Dry or Soda Water if you like it less sweet
Ice - as needed

- Garnish -
Mint Sprigs
Fresh Cranberries
Pomegranate Seeds
Lime Wheels

DIRECTIONS:

Add cranberries, sugar and water to a saucepan and bring it to a boil. Once it starts to boil, reduce to low heat and allow to simmer for 5 minutes until cranberries start to open and a thick sauce starts to form. Set aside to cool

Use a lime wedge to wet the rim of your glass and use the sugar to create a rim.

Add mint leaves and lime juice to the glass and muddle for a minute to release the mint flavors.

Add ice followed by a dollop of the cranberry reduction, rum, and pomegranate juice.

Add a splash of ginger ale or soda water, give it a stir, garnish with your fav garnishes and serve!

Pomegranate Sour

INGREDIENTS:

1.5 oz. Singleton of Dufftown Tailfire
1 oz. fresh lemon juice
0.5 oz. egg white
0.5 oz. simple syrup
2 oz. of fresh pomegranate juice
Mint for Garnish

DIRECTIONS:

- Dry shake all ingredients.

- Add ice. Shake again.

- Strain (use a fine strain) (looks great in a seamless wine glass or old fashioned glass)

- Garnish with mint

HOW TO DRINK CASAMIGOS REPOSADO

So if you have been living under a rock as I have, you would not have known that besides being the face of Nespresso, George Clooney along with Randy Gerber and Mike Meldman founded a tequila company called Casamigos.

Legend has it that the trio met in Cabo and decided to work with local Jalisco talent to create a premium tequila of their own. The end result - Casamigos - literally translating into 'house of friends'.

Casamigos has three 'levels' of premium tequila: Blanco, Reposado, and Anejo all made from 100%  hand-select Blue Weber Agave is grown in the rich soil and cool climate of Jalisco, Mexico's highlands.

Last week I was gifted a bottle of Casamigos Reposado and decided to experiment with my new bottle of tequila by trying out a couple of different cocktail recipes. In the end, I found three cocktails recipes perfect for summer that I really liked and had to share them with you.


THREE CASAMIGOS REPOSADO COCKTAILS

Sugar, Spice, and Everything Nice

Casamigos reposado tequila cocktail recipes- Strawberry Jalapeno Mint Cocktail

INGREDIENTS FOR THIS CASAMIGOS REPOSADO COCKTAIL:

Coarse Salt for Glass Rim
1 oz Fresh Lime Juice
1/2 oz Simple Syrup
3 Strawberries - Sliced (save one slice for garnish)
3 Slices of Jalapeno (save one slice for garnish)
1 Small Handful of Mint
1.5 oz Casamigos Repesado Tequila
1 oz Cointreau

DIRECTIONS:

Take a piece of lime and wet the rim of your cocktail glass before placing it in a bed of salt.

Muddle lime juice, simple syrup, strawberry slices, jalapeno slices, and mint in a cocktail shaker before adding in ice, Casamigos Tequila, and Cointreau. Shake until the cocktail shaker is cold and pour liquid into a cocktail glass. Garnish with a piece of lime, strawberry, and jalapeno!

INGREDIENTS FOR THIS CASAMIGOS REPOSADO COCKTAIL:

2 oz Grapefruit Juice
1 TBSP Fresh Lime Juice
1/2 TSP Honey (agave also works if you are vegan)
1 oz Casamigos Repesado Tequila
2 oz Club Soda

*if you have a grapefruit on hand add a bit of grapefruit zest to the salt before you rim your glass

DIRECTIONS:

Take a piece of lime and wet the rim of your cocktail glass before placing it in a bed of salt.

Place grapefruit juice, lime juice, honey, ice, and tequila in a cocktail shaker and shake until cold. Pour into a cocktail glass and add club soda, garnish with a piece of grapefruit or shave off a grapefruit peel and wrap inside the glass.

INGREDIENTS FOR THIS CASAMIGOS REPOSADO COCKTAIL:

1 oz Lime Juice
2 oz Pomegranate juice
Small Handful of Mint (save some for garnish)
1 TBSP of Honey
1 oz Casamigos Repesado Tequila
2 oz Ginger Beer

DIRECTIONS:

Place pomegranate juice, lime juice, shredded mint, honey, ice, and tequila in a cocktail shaker and shake until cold. Pour into a cocktail glass and add ginger beer and garnish with a piece of mint.

STRAWBERRY FIZZ COCKTAIL

This past weekend I made a delicious cocktail using some fresh organic Ontario strawberries I picked myself! Since I was at the cottage on Georgian Bay I of course used some Georgian Bay Vodka but you can use whatever you have. I thought this was such an easy yet delicious cocktail I had to share it with you.

INGREDIENTS:

3-4 Strawberries (leave one for garnish and muddle the rest)
1 Oz of Vodka (I used Georgian Bay because it has hints of Vanilla)
4 Oz of Tamarind Jarritos Soda

DIRECTIONS:

Muddle the strawberries and pour into your glass, top with vodka and Tamarind Jarritos Soda. Garnish with a slice of strawberry!

*You can chill the vodka and Jarritos soda to ensure the drink is cold and refreshing.

DOMA TORONTO - FRENCH INSPIRED KOREAN FOOD!

If you have been following along on my Instastory or Snapchat recently you would have seen that I had dinner at one of Toronto’s newest restaurants Doma!

Doma, which means ‘cutting board’ in Korean, opened less then a year ago and occupies the old Acadia space smack in the heart of Toronto’s little Italy neighbourhood at Clinton and College. The restaurant itself is bright yet intimate with its white and wood based minimal interior and 43 space seating (more seats to come with the opening of the patio this summer). Although small it is definitely cozy and great for anyone looking for a modern, refined or romantic spot to dine (Hey! That rhymes!).

The genius behind Doma is owner/chef Paul Kim, a Le Cordon Blue graduate who is originally for Seoul, South Korea. His love for food, cultural background and of course his training in french cuisine inspired him to open his first restaurant where he hoped to alter peoples perception of Korean food by adding a French inspired twist to each dish. The end result - nothing short of perfection!

Chef Paul Kim’s dishes are often inspired by seasonal ingredients and therefore change monthly with a few favourites remaining on the menu. When I went I opted for the tasting menu at $65 a person whichgives you a small sample of each dish and with 8-9 dishes making up the menu you are definitely going to walk away full!

The food itself was not only graciously plated with impeccable presentation, but the flavours were robust and symphonic. Chef Paul Kim definitely knows how to grab your attention by using natural colours from the ingredients to add dimension to the plate. Each dish was so unique and stood out in both variety and appeal from each other.

Before starting your meal consider trying one of their excellent cocktails as well (usually around $13). All cocktails are specially designed in-house and incorporate Korean Ingredients. I had the ‘In Harmony’ while my mom (always the best dinner date) had the ‘Pear of My Eye’.

All in all I am happy to report that it is definitely a spot you should not only add to your list but bump to the top! Although it can get quiet expensive ($200 for 2 people including drinks, tax and tip) it is a perfect restaurant to wine and dine someone on a special occasion, or to impress someone you know who has a passion for food.
